Most salads called 'superfoods' are just kale with a buzzword attached. This one actually earns it. The Gem State Superfood Salad is built around fresh, Idaho-grown microgreens from Gem State Greens — nutrient-dense, locally harvested, and honestly one of the best things you can put on a plate. Pair them with roasted beets, creamy avocado, toasted pepitas, and a sharp lemon-tahini vinaigrette, and you have a salad that does real work without asking you to sacrifice flavor.
This is weeknight-friendly, meal-prep approved, and impressive enough for a dinner party spread.
Prep time: 15 minutes | Cook time: 0 minutes (use store-bought roasted beets to keep it quick) | Servings: 2 as a main, 4 as a side

Ingredients
- 2 cups Gem State Greens sunflower microgreens
- 2 cups baby arugula
- 2 medium roasted beets, sliced (vacuum-packed work great)
- 1 cup of Gem State Greens Superfood Blend
- 1 ripe avocado, sliced
- ¼ cup pepitas, lightly toasted
- ¼ cup crumbled goat cheese
- 1 small watermelon radish, thinly sliced
For the lemon-tahini vinaigrette:
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1 teaspoon raw honey
- 1 small garlic clove, minced
- 2–3 tablespoons warm water (to thin)
- Salt and cracked black pepper to taste
---
Instructions
1. Make the dressing. Whisk together tahini, lemon juice, olive oil, honey, and garlic in a small bowl. Add warm water one tablespoon at a time until the dressing reaches a pourable consistency. Season with salt and pepper. Set aside.
2. Build the base. Add the arugula to a wide, shallow serving bowl or platter. Layer the sunflower and Superfood blend microgreens on top — don't mix them in yet. Their texture is part of the experience.
3. Add the toppings. Arrange the beet slices, avocado, purple cabbage, and radish across the greens. There's no wrong way — go for color contrast.
4. Add crunch and creaminess. Scatter the toasted pepitas and crumbled goat cheese over the top.
5. Dress and serve. Drizzle the lemon-tahini vinaigrette over everything just before serving. Toss lightly at the table so the microgreens stay upright and don't wilt.

Chef's Tips
- Toast your pepitas in a dry skillet over medium heat for 3–4 minutes, tossing often. It takes two minutes longer than you think it needs and is completely worth it.
- Slice the radish paper-thin using a mandoline if you have one. It makes the salad look professional and keeps the bite mild instead of sharp.
- Don't overdress. The tahini vinaigrette is bold. A light drizzle goes a long way — you can always add more.
- Make the dressing ahead. It holds in the fridge for up to five days and only gets better. Use it on grain bowls, roasted vegetables, or as a dipping sauce.
- Swap goat cheese for feta if that's what you have. Both work. Vegan? Toasted hemp seeds add similar richness without the dairy.

Why Microgreens
Sunflower and Superfood Blend microgreens from Gem State Greens are the anchor of this recipe — and not just for looks. Harvested at peak growth right here in Idaho, they bring a satisfying nutty flavor and a sturdy texture that holds up under dressing without going soggy. Compared to mature sunflower seeds, sunflower microgreens contain significantly higher concentrations of essential amino acids and chlorophyll. They're also one of the few microgreens with enough body to function as a true salad green, not just a garnish. When you're sourcing local from Gem State Greens, you're also getting greens cut to order — meaning what lands on your plate was growing in soil a day or two ago. That's a freshness gap that imported produce simply can't close.
